Mac Nut Cookies & Toasted Coconut Coffee Ice Cream Sandwich

Using King's Hawaiian Toasted Coconut Moloka’i Whole Bean Coffee as inspiration, I made a batch of homemade coffee ice cream and used King's Hawaiian Macadamia Nut Shortbread Cookies to make the ultimate ice cream sandwich. All the flavors of Hawaii in an ono summer treat!


Mac Nut Cookies + Toasted Coconut Coffee Ice Cream Sandwich

Toasted Coconut Coffee Ice Cream
2 cups heavy cream
1/2 cup whole milk
1/2 cup strongly brewed King's Hawaiian Toasted Coconut Moloka’i Whole Bean Coffee
3/4 cup sugar
1 teaspoon vanilla
Brew the coffee much stronger than you normally would to get the full coffee flavor. Let the coffee cool down before adding it to the recipe.
In a small bowl combine the heavy cream, whole milk, coffee, sugar and vanilla. Stir well until the sugar is dissolved.
Pour the mixture into your ice cream machine per the manufacturer's directions.
Spoon into an airtight container and freeze.
Scoop the ice cream and place it between two King's Hawaiian Macadamia Nut Cookies (available at the King’s Hawaiian Bakery), or any two cookies of your choice, to serve.
