Memorial Day BBQ Pulled Pork and Apple Coleslaw

There are very few things to eat that help welcome in the warm, back yard BBQ season better than pulled pork sandwiches.  All you have to do is just mention the phrase "pulled pork sandwiches" and your family and friends' eyes will light up with anticipation.  Pulled pork sandwiches can be as easy as just tossing some smoked pulled pork between two slices of plain ol' white bread, but for this recipe, we're gonna step it up a notch, put an apple flair on it and make some amazingly tasty pulled pork sandwiches with a homemade apple coleslaw and apple BBQ sauce. All piled high between a tasty KING'S HAWAIIAN® Original Hawaiian Sweet Sandwich Bun.  Yum yum yum!

This recipe is super easy to make, though there are two steps that can either increase or decrease the total time. The first is the time it takes to Julienne the apples for the coleslaw…so… if you don't have enough time for that you can always just skip that step.  The second is the coleslaw mix.  I cheat and just buy the pre-made coleslaw mix from the produce section.  You can make your own, but that will drastically increase your time.  Other than that, I would just highly recommend you slow smoke a Boston butt for your pulled pork.  You can certainly save some time and hassle by cooking it in a crock pot, but to a BBQ guy like me, that's sacrilege :)

Apple Coleslaw

1 package of coleslaw mix

4 or 5 apples (I used Fuji apples)

1 cup mayonnaise

1/3 cup honey

1/4 cup apple cider vinegar

2 tsp poppy seeds

1/2 cup chopped pecans

Julianne your apples and make sure to pour some lemon juice over them as you Julienne them so they don't turn brown.  Mix all ingredients in together and sit in the fridge until your ready to top the pulled pork sandwiches.

Apple BBQ Sauce

1 cup of your favorite BBQ sauce (Most store-bought sauces offer an "Original" flavor.  I recommend using an Original flavor as your base for this as the goal here is to let the apple flavor really come through.)

1 cup apple jelly

1/4 cup apple cider vinegar

Whisk all ingredients together and sit in the fridge until it's time to top the pulled pork sandwiches.

And lastly, simply pile some pulled pork on the bottom half of a KING'S HAWAIIAN Original Hawaiian Sweet Sandwich Buns. l then top with some apple coleslaw and apple BBQ sauce.  For presentation (and to make your guest's mouths water uncontrollably), tilt the top half of the bun up against the base of yumminess you just built.  Serve with a side of the apple coleslaw and set a few whole apples out as well for an extra touch.  Enjoy!!
