KING'S HAWAIIAN Bread Fritters

Chef Ricardo HerediaHeredia is a chef from the new school of cooking. In fact, he didn’t go to school for training at all. With the help of his family, Ricardo was exposed to good home style cooking from a mix of cultures including Mexican, Caribbean, Hawaiian and Filipino. Ingredients
2 cups
KING'S HAWAIIAN Honey Wheat Round Bread bread crumbs
6 ounces
Aged Cheddar cheese, grated
2 tablespoons
Finely chopped scallion
2 tablespoons
Chopped fresh parsley
1 tablespoon
Chopped fresh thyme
1 tablespoon
Coarse-grained mustard
2 eggs
1 separated
1 teaspoon
Ground black pepper

Preparation
Step 1
Toast KING'S HAWAIIAN Breads Step 2
Make bread crumbs by pulsing bread in food processor Step 3
Mix the KING'S HAWAIIAN Honey Wheat bread crumbs with the cheddar cheese, scallion, parsley, thyme, mustard, whole egg, one egg yolk, and ground black pepper to taste. The mixture may appear dry at first, but knead it lightly with your fingers and it will come together. Step 4
Divide dough into 12 round balls. Step 5
Whisk the egg white until lightly frothy and put the dried bread crumbs in a bowl. Step 6
Dip the fritters first into the egg white then coat them evenly in bread crumbs, shaking off any excess. Step 7
Heat a deep-frying pan one-third full to 350 and carefully fry fritters for 2 minutes each or until golden brown. Step 8
Drain on paper towels.
