Egg Salad Sandwich

Egg Salad Sandwich

Makes 4 servings.
Ingredients
  • 1 package King's Hawaiian Sandwich Buns
  • 8 eggs, hard-boiled, chopped
  • 1/2 cup mayonnaise
  • 1/8 cup mustard (preferably Dijon style)
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup chopped green onions (about two)
  • 4 - 8 bibb lettuce leaves Optional additions (choose one)
  • 4 slices bacon, cooked crisp & crumbled
  • 1/4 - 1/2 cup diced ham
Preparation
  1. Combine chopped hard-boiled eggs, mayonnaise and mustard.
  2. Add salt, pepper and chopped green onions. Mix well.
  3. Add bacon or ham to mixture if desired.
  4. Put lettuce on the bottom of King's Hawaiian Sandwich Bun.
  5. Add 1/2 cup of egg salad on each bun.
  6. For a lighter dish, consider using light mayonnaise; use center-cut bacon with fat removed.
  7. Serve immediately, or refrigerate in an airtight container until serving.
