Jalapeño Breakfast Sliders

4 Sausage rounds
5 eggs
1/4 cup milk
2 green onions sliced
salt and pepper to taste
2 tablespoons butter
1 jar (7.4 ounces) Roasted peppers
4 slices cheese
4 King's Hawaiian Jalapeño Rolls, cut in half


Step 1
Preheat oven to 350 F.

Step 2
In a small skillet fry sausages rounds in 1 tablespoon of the butter until cooked through, about 2 minutes per side.

Step 3
Meanwhile, whisk eggs, milk, green onion, and salt and pepper. In a skillet over medium heat, melt remaining butter and pour in eggs. When bottom appears cooked, fold over as if an omelet and let eggs finish cooking. Remove from pan and cut omelet into 4 pieces.

Step 4
To assemble, top the bottom half of each Jalapeño roll a piece of roasted red pepper, sausage, egg and cheese and top with the other half of the roll. If desired, breakfast slider can be kept warm in 250 F oven.
