Poi Muffins with Sweet Bread Streusel

2 cups all-purpose flour
1-1/2 cups sugar
1 cup Poi (mixed with 1/4 cup water)
1 teaspoon baking powder
1/2 teaspoon Baking Soda
1/2 teaspoon salt
6 tablespoons Melted Butter
2 eggs
1 cup heavy cream
Streusel Topping: *
1/4 cup flour
1/4 cup Brown sugar
1/4 cup KING'S HAWAIIAN Sweet Bread Crumbs
2 tablespoons Cold Butter


Step 1
Preheat the oven to 375 degrees. Prep muffin pans with liners.

Step 2
In a small bowl make the streusel by mixing together the flour, brown sugar and King’s Hawaiian Sweet Bread crumbs. Cut the cold butter into the mixture until crumbly. Set aside.

Step 3
In a medium bowl whisk together the flour, sugar, baking powder, baking soda and salt.

Step 4
Prep the Poi by stirring it together with ¼ cup water and it to the dry ingredients along with the butter, eggs and heavy cream. Stir together until just combined.

Step 5
Spoon the batter into the liners about 3/4 of the way full. Generously add the crumb topping on top of each muffin.

Step 6
Bake for 14-16 minutes depending on your oven, let cool slightly on a wire rack.
