Spicy Chicken Katsu Sandwich, by Stacks Pancake House

6 Chicken Katsu, 4 oz each – See recipe below
6 Leaves Lettuce
1 Large Tomato, sliced into 6 pieces
4 Slices Swiss Cheese
12 strips hot cooked bacon
Spicy Mayo/Dynamite Sauce – See recipe below
1 cup mayonnaise
1/4 cup Sriracha (or your favorite hot sauce)
*Chicken Katsu Ingredients*
6 Chicken Breast, skinless, boneless, pounded to ½” thickness Salt and Pepper, to taste
4 tablespoons all purpose flour
2 large eggs beaten
2 cups Panko Bread Crumbs
2 cups Oil for frying, or as needed

Step 1
Season chicken breasts on each side with salt and pepper.

Step 2
Place the flour, eggs and panko each in separate shallow dishes.

Step 3
Coat chicken breasts in flour, shaking off any excess flour.

Step 4
Dip chicken into the egg, then press into the panko crumbs until well coated on all sides.

Step 5
Heat ¼” oil in a large skillet over medium-high heat.

Step 6
Place chicken in the hot oil and cook 3 – 4 minutes on each side, or until golden brown.

Step 7
Remove from oil and dry with paper towel

Step 8
Combine Spicy Mayo / Dynamite Sauce ingredients and mix well.

Step 9
Spread Spicy Mayo / Dynamite Sauce on each half of KING’S HAWAIIAN Original Sweet Hamburger Bun.

Step 10
Heat pan on medium heat, place top half of buns on hot pan, sauce side down.

Step 11
Place bottom half of buns on an oven proof plate or tray, sauce side up.

Step 12
Place chicken katsu on bottom half of bun, top with Swiss cheese.

Step 13
Place oven proof plate or tray in the oven on broil until cheese is melted and spicy mayo turns slightly brown.

Step 14
Remove from oven and top with lettuce, tomato, bacon, and bun.
