Sweet and Spicy Tuna

3 - 6 oz. Cans Albacore tuna, drained
1 carrot, chopped
1/2 red onion chopped
3 small celery stalks, chopped
1 Cup Mayo
Salt to taste
Pepper to taste
1 Avocado- sliced
2 Tomatoes, sliced
1/2 red onion, sliced
2 pickles
3 red leaf lettuce leaves, washed
4oz Jar Inglehoffer Cranberry Mustard
1/2 Cup Racconto Spicy Giardiniera (can substitute sliced jalapenos)
6 slices Tillamook pepper jack cheese
1 Package King’s Hawaiian Original Hawaiian Mini Sub Rolls


Step 1
In a large bowl combine tuna, carrot, onion, celery, mayonnaise, salt and pepper.

Step 2
In a separate bowl combine cranberry mustard and mayonnaise

Step 3
To construct sandwich, evenly spread cranberry mayo mixture to sides of bread. Add a generous amount of tuna salad mixture to the bottom piece of bread. Then continue to layer avocado, tomato, onion, pickles and lettuce.

Step 4
For the final touch, add the Racconto Spicy Giardiniera to add a kick of flavor. Place top side of bread on top. Serve with a bag of chips and enjoy!
