Chef Ricardo Heredia
Heredia is a chef from the new school of cooking. In fact, he didn’t go to school for training at all. With the help of his family, Ricardo was exposed to good home style cooking from a mix of cultures including Mexican, Caribbean, Hawaiian and Filipino. His passion for food and the need to provide for his family was the driving force that helped him become Executive Chef of Alchemy in San Diego
Recipe Details

2 cups Peanut butter, preferably smooth

4 small Ripe bananas

16 pieces bacon

4 tablespoons Butter (optional)

8 slices KING’S HAWAIIAN Original Hawaiian Sweet Sliced Bread

Step 1
Pre heat your oven to 350 degrees F.
Step 2
Lay bacon on a parchment lined sheet pan and bake in for 25-30 min or until crispy. Drain on paper towels and reserve.
Step 3
In a large sauté pan drain the bacon fat into the pan. Peel and slice bananas, fry on medium heat for about 1 minute on each side. Drain on paper towel and set aside.
Step 4
Spread two tablespoons peanut butter evenly on one side of each slice of bread, then apply bananas on the peanut butter slices. Put four pieces of bacon on each sandwich and close, gently pressing bread slices together.
Step 5
Heat 2 Tbsp of butter in an 8- to 10-inch heavy (preferably cast iron) skillet over moderate heat until foam subsides, then fry two sandwiches, turning over once, until golden brown, approximately 1.5 minutes on each side. Drain on a paper towel and repeat with remaining two sandwiches, cut in half and serve immediately.
